A MAN, SOME RABBITS & A FORD ESCORT

Nicky USA is the premier wholesale butcher & purveyor of high quality meats & specialty game in the Northwest. This year we are celebrating our 33rd year in business. Founder Geoff Latham, a graduate of Oregon State University's Agricultural Business Management School, founded the business in 1990 and started out by selling rabbits from the back of his Ford Escort hatchback to a few eager chefs. Some of our earliest supporters included Philippe Boulot, Cathy Whims, Vitaly Paley and Greg Higgins, chefs who were all leaders in the local, seasonal farm to fork Northwest food movement.  

We now have a team of 20 employees, including a full service commercial USDA food service butchery & processing facility, and carry over 1000 items & cuts curated for the most discerning chef, food service, and retail customers. While we still take great pride in the specialty game that we sell, we are a full-service meat distributor with great lines of beef, pork, chicken and lamb. In many cases we have multiple offerings of these items to suit any menu option and price point.

It takes a team of dedicated, hard-working, and experienced people to run Nicky USA. We are grateful that we have an exceptional workforce in every department of our company. Our staff is our number one resource at Nicky USA and the key to our success.

Our sales staff is dedicated to providing professional service tailored to meet your needs. We understand that food service and restaurants are fast-paced environments & menus change often, in fact many of our sales people come from a restaurant & culinary background making them ideal for helping you find the right product for your kitchen.

Using the latest in inventory & invoicing management software, our warehouse and delivery staff is able to pull your order with increased efficiency. We strive to process your order quickly & deliver it accurately so you have more time in the kitchen and not on the phone.

MORE THAN A MEAT COMPANY

While selling meat is our primary business at Nicky USA, we also strive to reach beyond the traditional sales relationship with our customers & community. We actively support and promote our chef, industry and retail partners at numerous events and fund-raisers. We have also taught butchery classes and supported culinary programs for youth groups to promote careers in the food industry.

We are proud to work with Growing Gardens as our cornerstone non-profit partner to support their mission to reduce hunger and transform lives through gardening and growing your own food. We have worked to raise funds and awareness for this great organization through various methods including in-kind meat donations and their Chef in my Garden dinner series. In 2017, with the support of generous restaurant, retail and vendor partners we have helped raised over $10,000 for Growing Gardens. 

Nicky USA is also proud to support High Performance Rugby and Rugby Oregon. The mission of High Performance Rugby to continue to improve players’ skills and achieve excellence matches perfectly with our company’s goals to continually strive to be leaders in our industry.

Nicky USA owner Geoff Latham has been involved with rugby since his college days when he played with the club team at Oregon State and has always championed the growth and advancement of the sport. Both of his sons share his passion for the sport, and played in Rugby Oregon when they were in high school. At Nicky USA we believe rugby exemplifies the best values of sport & life - teamwork, honor, integrity, strength, service, and family. We look forward to a long partnership with Rugby Oregon and helping to support and grow a sport we love.
